Start by taking Lannisport and cutting off all supplies to Casterly Rock by having your fleet besiege it by sea, this way will take time, but in time it would be forced to surrender.

Casterly Rock has been occupied long enough that it's no longer viable as a mine. Frankly Casterly Rock's mines probably went dry long before even Aegon's Conquest. I have a personal theory that there is a store of gold the Lannisters keep locked as a wellspring of money they occasionally tap.

For something truly extreme, Tyrion leads a dragon attack on Casterly Rock during which he uses his knowledge of the sewers and tunnels to direct the heat and fire through the very foundations of the bluff/castle.
